FRESH APPLE CAKE
1 3/4 Cups sugar
3 eggs
1 cup vegetable oil
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
2 cups peeled and chopped apples
1. Preheat oven to 350F. Grease and flour a 13 by 9 inch baking dish.
2. Beat sugar, eggs and oil together with a mixer until well blended. Mix in flour, baking soda, cinnamon and salt. Stir in apples and walnuts, mixing well.
3. Pour into baking dish. Bake 50 - 55 minutes. Let cool before icing.
Cream Cheese Icing
1/2 cup butter or margarine, softened
1 pound confectioners sugar
8 ounce cream cheese, softened
1 tsp vanilla extract
To prepare the icing, mix butter, sugar, cream cheese and vanilla. Spread on cooled cake.

Apple Crumble Bars Michael Nelson
3/4 cup brown sugar 3/4 cup oats 1 1/2 cup flour 1/4 tsp baking soda 3/4 cup butter
2 1/2 cup apples sliced 1/2 cup sugar 11/2 Tbsp cornstarch 1/2 cup boiling water
1/2 tsp vanilla extract
Combine brown sugar, oats, flour, baking soda and 2 Tbsp of butter, press crumbles into a
9" x 13" pan, then put apples atop. Combine sugar, cornstarch, water, vanilla and remaining butter, spread on apples. Bake at 350 for 35 - 45 minutes.
Dressing: 1 cup vegetable oil, 1/2 cup sugar, 1/2 teaspoon paprika, 1 clove garlic, 1/2 cup raspberry vinegar, 1/2 teaspoon salt ,1/4 teaspoon pepper--Blend and chill.
You can use any kind of greens but I prefer spinach.
Add 1 pint of strawberries cut up, grated monteray jack cheese and course chopped walnuts.
Toss dressing over greens just berfore serving.
